My name is Gregory Doyen, he has the most beautiful profession : « pastry », through this page I will let you discover my passion, my daily work.
It all starts during my childhood in the family kitchen, when my mother discovered that by mixing several sweet products, we could get something magical and unforgettable.
This magic will seduce me, my dream can finally begin.
LEARNING
At this precise moment begins an important step in the realization of my dream, learning which will last 5 years between Dijon (Le Castel High School) and Yssingeaux (ENSP), I learn the basics of my future profession and receive 4 diplomas (CAP – BEP, MC and BTM).
These years of learning are the beginning of a beautiful story.
WORK
A large Lyonnaise house «LAFAY» for the pastry shop part.
The Great Vefour Paris and the Holy Paul to St Paul de Vence for dessert on a plate.
And finally the most beautiful house in the world «Potel and Chabot» to Paris for creation.
My passion and desire to learn will make me cross certain borders and discover China, the United States, Russia and many other countries.
CHEF PATISSIER
It is in 2008, at the age of 24, that my passion will finally be able to express freely at Moscow (Russia) for «Potel and Chabot».
Creation and custom event will animate my daily life for 2 years.
EXECUTIVE PASTRY CHEF
In 2011, I became Executive Pastry Chief and Director of Restoration for the group «Hediard Russia».
Customised creation of an ultra-luxury laboratory of 600 m2 bringing together all the different parts of the profession of pastry maker.
The desire to discover other horizons will make me decide to leave this country in 2015.
After more than 7 years wonderful to Moscow, My future destination will be Taiwan, for «Mandarin Oriental Hotel».
TRANSMITTER
Meetings, the discovery of new cultures, customs, gives me the desire to share my know-how.
In 2014, I created my brand GD Sweet Concept, the beginning of a great mission begins.
Demonstrations, technical advice and Master Class will take to Dubai, Oman, Doha, Qatar, Abu Dhabi, Prague, Helsinki and many other destinations.
